One Pot Green Beans

This is another family favorite, courtesy of our summer garden! These beans give you that all day, slow cooked flavor in around 30 minutes. The best thing about this recipe is that once you start them on the stove, you don’t touch them until they are done.  This is a great veggie to make in excess, so you can use it as your side dish the next 1-2 nights. We have no problem eating these delicious green beans for 2-3 nights in a row (or warmed up for lunch the next day)!


One Pot Green Beans
  1. 2lbs fresh bush beans
  2. 5 slices of bacon, cooked and chopped
  3. ½ yellow onion thinly sliced
  4. 5 cloves of garlic, minced
  5. 2 T butter
  6. Salt and pepper to taste
  1. 1. Snap the ends off of the green beans leaving them whole. Wash and place in a large wok or stock pot.
  2. 2. Cook bacon in skillet on microwave then chop into bite sized pieces and toss into pan with green beans.
  3. 3. Thinly slice the onions and add to pot with 2 T butter, salt and pepper.
  4. 4. Add 1 cup of water to pan and bring to a simmer, then turn heat to low and cover for 30-40 minutes. Do not lift lid until 30-40 minutes to allow the beans to steam. You can alter the time based on preference of crisp or soft texture.
