Easy Southwestern Chicken Bake I’ve tried several “quick and easy” recipes that I’ve seen on Pinterest or on Facebook and am usually disappointed by the lack of flavor. So of course I’ve adapted a few of the recipes I’ve seen to come up with this version. This recipe is by far my quickest dinner prep yet (with the exception of reheating leftovers) and is full of flavor. It takes me around 10 minutes to measure and pour everything into a baking dish, then I have an entire hour to do other things around the house while its baking. For us, this recipe is even better than a crock pot meal since it only requires 1 hour to cook and everything cooks in one dish. Crock pot meals are great and all, but we are rarely able to start the crock pot 3-6 hours before dinner time. 


We make this dish at least once a month and eat it for two nights. I usually make 4-5 chicken breasts at a time so we can eat it two nights. In this picture, I only used 3 as they were very large. We almost always have these ingredients on hand, so it is a great last minute dinner for busy weeknights. Our little guy won’t eat rice as a side dish, so I make his into a taco with the shredded chicken, some of the rice mixture and cheese. We add cilantro, green onions and diced avocado to give ours even more flavor.  Enjoy!


Easy Southwestern Chicken Bake
  1. 4 chicken breasts
  2. 1 cup brown rice (we use Minute brand brown rice)
  3. 1 cup frozen corn
  4. 1 15 oz can of black beans, rinsed and drained
  5. 1 16 oz jar of salsa
  6. 1.5 cup chicken broth
  7. 1 t oregano
  8. 1 t chili powder
  9. 1 t garlic powder
  10. 1 t cumin
  11. 1 cup shredded monterey jack, white cheddar or pepper jack cheese
  12. salt and pepper
  13. 1/4 cup chopped cilantro
  1. 1. Preheat oven to 375 degrees F.
  2. 2. In a 8x11 baking dish, add rice, corn, black beans, salsa, chicken broth, oregano, chili powder, garlic powder, cumin, salt and pepper and stir to combine.
  3. 3. Add chicken breasts and push down into the sauce mixture. Top chicken with salt and pepper.
  4. 4. Cover with foil and bake for 1 hour.
  5. 5. After 1 hour, uncover and add 1 cup of cheese and return to oven until melted.
  6. 6. Add chopped cilantro, green onions, or diced avocado. Enjoy!
