Creamy Sausage and Mushroom Soup

buy modafinil greece We were planning to take stuffed mushrooms to a Christmas party last night, when the party was postponed.  So what do you do with 2 lbs of mushrooms, sausage, and a fennel bulb?  We decided to make a soup by combining these unclaimed ingredients with a few staples we already had on hand. After all, that’s the great thing about soup: it’s difficult to mess up and you can throw just about anything in it. It turned out great, and is very hearty for a weekend meal.   

First, saute the diced fennel bulb and yellow onion in 1 T of olive oil.  Once softened, add the sausage and garlic.  Brown sausage, then drain off grease.  Add vegetable broth and bring to a boil, then add diced potatoes, mushrooms, and kale.  Cover and turn down to a simmer to cook the potatoes.  Once the veggies are all softened, add 1 cup half and half.  Whisk 2 T cornstarch and 2 T water, then whisk it into the soup to thicken. This recipe makes a lot of soup, perfect to take for lunch or freeze for a later date!

Creamy Sausage and Mushroom Soup
  1. 2 lbs ground sausage (we used Johnsonville, 1 lb hot & 1 lb mild)
  2. 1 yellow onion, diced
  3. 1 fennel bulb, diced
  4. 4 cloves of garlic, diced
  5. 4-5 red potatoes, diced
  6. 16 oz baby bella mushrooms, sliced
  7. 2 cups finely chopped kale (optional, we added it for the pop of color)
  8. 6 cups vegetable broth
  9. 1/2 t thyme
  10. 1 t fresh ground pepper
  11. 1 cup half and half
  12. 2 T cornstarch
  1. 1. Dice the fennel bulb and onion and saute in 1 T olive oil in large stock pot.
  2. 2. Once softened, add sausage and garlic. Brown sausage, then drain grease.
  3. 3. Add vegetable broth and bring to a boil.
  4. 4. Add potatoes, mushrooms and kale cover and reduce heat to soften potatoes.
  5. 5. Once the veggies are softened, add 1 cup of half and half.
  6. 6. Whisk 2 T cornstarch and 2 T water together, then whisk into the soup. This will thicken the soup once you turn the heat back up to medium heat.
  7. 7. Cook another 10 minutes to thicken.
