15 Minute Honey Almond Granola

pop over to this site We are all granola lovers at our house and I have bought just about every brand out there. After spending around $15 one day on two different types at the grocery store (neither of which our son liked), I decided to make my own. I tried 3 or 4 versions found on Pinterest and they were okay. So I then created this recipe using my favorite ingredients out of the 3-4 I tested. Our son eats it with Greek yogurt for breakfast or an after school snack.  We make this granola at least once per week and it is a great quick breakfast for Phil and I too.  We eat it in Greek yogurt or on its own while driving to work.  I store it in an air tight container for around a week (if it lasts that long). Enjoy!


15 Minute Honey Almond Granola
  1. 1c slivered or sliced almonds
  2. 3c old-fashioned oats (not quick oats)
  3. 1/4 c brown sugar
  4. ½ t salt
  5. 1 t cinnamon
  6. 2 T ground flaxseed meal (we like Simple Truth brand from Kroger)
  7. 1/3 c honey
  8. 3T coconut oil
  9. ½ t vanilla extract
  10. 1/8 t almond extract
  11. Optional: raisins or other dried fruit
  1. 1. Preheat oven to 350. Combine almonds, oats, brown sugar, salt, cinnamon and flaxseed meal in a large bowl.
  2. 2. In a small microwavable bowl, combine honey and coconut oil and heat for 30-40 seconds. Stir until coconut oil is dissolved and add vanilla and almond extract.
  3. 3. Pour honey mixture over oats and stir until evenly coated.
  4. 4. Pour oat mixture onto a rimmed baking sheet (I use a 12x17 so its a thin layer) lined with parchment paper. Spread evenly.
  5. 5. Bake for 5 minutes, stir then bake for 7 more minutes.
  6. 6. Let cool in pan, then break apart and store in air tight container.
  1. If your pan is smaller than 12x17, divide into two pans. If it is in too thick of a layer, the granola will be more chewy instead of crunchy.
