Chewy Oatmeal Chocolate Chip Cookies

I’m constantly trying to make our favorite desserts slightly healthier. While these still contain sugar and chocolate, they are still healthier than your average cookie. These cookies have the consistency of a chewy granola bar instead of a cookie since there are twice as many oats to flour.  Oatmeal chocolate chip has always been my favorite cookie and these little devils are one of my go-to recipes when I have a sweet tooth.  These are super easy and I can’t even count the number of times I’ve made these!  I typically only bake 6 at a time so we each get two for dessert, then I put the dough back in the fridge until the next night.  I know myself and my family, if these bad boys were baked and on the counter, there would be no stopping us.  So now, I bake 6 at a time since we have no self control!

Ingredients
  1. 1 c white, whole wheat flour
  2. 1 t baking powder
  3. 1/2 t baking soda
  4. 1/2 t salt
  5. 1/2 t cinnamon (optional)
  6. 2 T butter, room temperature
  7. 1/4 c unsweetened apple sauce
  8. 1/2 c sugar (white or coconut)
  9. 1/2 c brown sugar
  10. 1 large egg
  11. 1 t vanilla
  12. 2 c raw old fashioned oats
  13. 3/4 c mini chocolate chips
Instructions
  1. 1. Preheat oven to 350.
  2. 2. In a medium bowl, whisk flour, baking powder, baking soda, cinnamon and salt together.
  3. 3. In a large bowl, cream together the butter and sugars. Beat in the egg, then applesauce and vanilla.
  4. 4. Stir the flour and oats into the creamed mixture until incorporated, then stir in chocolate chips.
  5. 5. Line a baking pan with parchment paper and bake for 10-12 minutes.
Notes
  1. Refrigerate dough for 1 hour for for a more dense, chewy version of this cookie.
