Apple Cinnamon Coffee Cake

This is my father-in-law’s favorite! I make this for brunch and even for dessert! With my love of sweets, I try to make my desserts healthy-ish by substituting apple sauce for butter/oil and whole wheat flour for white flour. In this recipe, I also use Truvia Baking Blend to substitute some of the sugar. I still use regular sugar for the topping, but will sub Truvia Baking Blend for the white sugar in the cake.  Be sure to check the conversion chart on the back of the Truvia bag as it is not 1:1 when swapping out regular sugar.  Next time I make this coffee cake, I’m going to experiment with coconut sugar.  It has the same amount of calories to regular sugar, but has a lower glycemic index.  I’ll let you know how it turns out!

Ingredients
  1. 1 ¾ c sugar, divided (I use ¾ cup Truvia Baking Blend in cake and ¼ white sugar for topping)
  2. 2 T butter, softened
  3. ¼ c unsweetened applesauce
  4. 6 oz light cream cheese, softened
  5. 1 t vanilla
  6. 2 large eggs
  7. 1 ½ c flour (I use ¾ cup white and ¾ cup white, whole wheat flour)
  8. 1 ½ t baking powder
  9. ¼ t salt
  10. 2t ground cinnamon
  11. 3cups chopped, peeled granny smith apples
  12. Canola or Coconut oil cooking spray
Instructions
  1. 1. Preheat oven to 350
  2. 2. Beat 1 ½ cup of sugar (or ¾ c Truvia), butter, applesauce, cream cheese, and vanilla on medium speed until well-blended.
  3. 3. Add eggs, 1 at a time, beating well after each addition.
  4. 4. Combine flour, baking powder, and salt in a small bowl. Add flour mixture to creamed mixture and beat until combined.
  5. 5. Combine ¼ cup sugar with cinnamon in a small bowl.
  6. 6. Stir 2 T of sugar and cinnamon mixture into the bowl of chopped apples.
  7. 7. Fold the apples into the batter.
  8. 8. Coat an 8 inch springform pan with cooking spray and pour in batter.
  9. 9. Sprinkle with remaining cinnamon and sugar mixture
  10. 10. Bake at 350 for 1 hour and 15 minutes or until the cake pulls away from the sides of the pan.
  11. 11. Cool completely before removing from pan.
